cabbage kicks lettuce in the head!

I have ruled out lettuce in my diet all together and have replaced it with cabbage and spinach. I can feel the difference already. My over all health has improved and my weight loss has kicked into overdrive. I also feel like I am getting ripped off a lot less by food venders who charge up to $8.00 for a salad that is 85% or $.40 worth of lettuce (usually white or brown besides the rip off).

Cabbage does outdo Lettuce in many ways.
Vitamins galor, minerals to boot and of course, the Crunch factor.
If that isn't enough you can make sauerkraut with the mighty Cabbage, it is not a bunch of krok....
Coleslaw in every house and hut....touche'

After being given a half head of cabbage by my Japanese neighbor, ans asking in dismay, 'How am I supposed to cook this?' ... being used to the smoked butt and cabbage my mom used to make, I have visions of boiled cabbage stinking up our apartment... but she gave me a great and simple recipe, and you can add anything you want to suit your own taste, but the basic recipe is:

Half head or 1/4 head of cabbage, sliced or chopped (depending on size of head)
1/4 med sized onion, chopped
4-5 cloves (not bulbs) of garlic
2 tbs butter (you can use oil, if you wish)
Soy sauce ( to taste )
3-4 tbs water

Combine all together in large skillet, and sautee away, med-high heat. Let the cabbage simmer so it softens up, and you have a very nice, tasty simple stir-fry cabbage. Doesn't tast like boiled at all, and you'll say to yourself, 'So that's what they put in chinese food!'

simple quick cabbage salad

Hi -

Just discoved this site and am so happy I did. KUDOS to AMIRUDY - I hope others follow you as a role model.

We eat loads of cabbage - especially after joining a CSA program. I keep bags of shredded ready in the fridge at all times - they last much longer than lettuce and are versatile. Try shredding a few varieties of cabbage - and when you need something to throw together for a meal - add balsamic and a really good mustard with lots of mustard seeds (we like Stonewall Kitchen's Bouborn Molasses Mustard). This works alone and keeps the flavors of the cabbage strong and simple. You can add olive oil, nut, fruit anything to it to suit you.

It's been about two years since I completely replaced green leaf lettuce with cabbage. I'm 55 years old, and I have always liked cabbage - especially in soups - but I never ate it regularly. Well. I got really tired of my lettuce wilting inside of a week, so I decided to try to replace it with cabbage. Guess what, folks? If you peel one leaf off at a time, a head of cabbage can last up to 4-5 months in your refrigerator crisper. Nobody believed me when I told them, but I know of three friends who are presently doing it. All of them said they had no idea it would last that long. Each leaf is as crisp as the last, and I no longer have to throw away the tough spine in the middle. My English Springer Spaniel loves it. He also loves carrots and radishes, too! Try shredded red cabbage on your hot dog, hamburger, sandwich and in your fish and bison tacos. Homemade corn tortillas, please. Enjoy!

I get the impression the article is a bit biased, but the facts within support the arrogance... I had no idea cabbage had so many great things. I have a terrible diet when it comes to eating veggies, so know this will help me keep those in my diet somewhere.
