			<description>Almonds like many other dry fruits contain moisture and that\'s why it\'s cheesy when you eat raw.
During roasting the moisture is lost and taste nice.
Does it lose any nutritional content??
No. not if you roast slowly at low temperature for long period of time. This is not easy to achieve.
It also get roasted in minutes at relatively high temperature, while you at all time.
Once it changes in color or taste, that\'s a degradation from nutritional content.</description>

			<description>No but roasting them turns them from a miracle food into a cancer causing food. Once you heat the almond up, you turn the fat rancid and it causes free radicals. Almonds are best left alone, washed to remove dirt and eaten raw.</description>

			<description>If the Color and Taste of the Almond is changed due to it being subjected to a change in temperature, you can bet your bottom dollar that its chemical composition has been changed.  It has lost a large ammount of its Nutritional value.  The fat content remains relatively the same, but the Nutrient effect has changed due to the temperature change.  
Put simply,  if you\'re at the market and you have a choice between roasted or raw Almonds, choose the raw, your body will benifit more.
The only difference I have noticed between raw Almonds and Roasted, is that the roasted offers more flavor, and that is because roasting it released large ammounts of oil that it holds.</description>
