What is Raw Organic Honey? |

Raw honey is the honey as obtained from honey bee hives without any heating. The entire process of extraction, settling and straining does not involve any application of heat. Some people also like to refer to comb honey as raw honey. However, the industry refers to comb honey as the honey as it exists in the honey bee hives.
Thus raw organic honey refers to honey which is raw in nature and obtained from organic apiculture.
Why is honey processed?
Comb honey contains numerous extraneous compounds with it. These extraneous solids include wax, propolis and pollen grains. Since these are unwanted substances in the honey, it is filtered. Strained honey, on the other hand, contains the pollen grains. In straining of honey, wax, propolis and other solids are removed while pollen grains are not removed.
Why do people prefer raw honey?
As mentioned earlier, raw honey is minimally processed. Application of heat and storage for a longer duration of honey leads to change in its enzymatic activity and antimicrobial properties. There might also be a variation in the color and chemical composition due to heat and prolonged storage. Customers face problem while purchasing raw honey as there are no set guidelines governing production, processing and handling or raw honey.
