Can yacon be used as a substitute for sugar?

I suffer from sugar sensitivity and hence am on a hunt for natural and healthy sweeteners all the time. Yacon syrup is actually is a great sweetener. I love the taste as it resemebles caramel.

Yacon syrup is often used by diabetics for a maintained blood sugar level. So yes you can use yacon in place of sugar.
