Rhubarb can be eaten raw, but only after the removal of its leaves. It can be dipped in sugar, honey, and maple syrup. Rhubarb can add a zing to a smoothie and can be used as a puree in vegetables. It can also be eaten in chutney or a sauce. Rhubarb can also be eaten dry or added to a garden salad after roasting it.
