Wash thyme leaves and let them dry. Crush them with the help of a mortar and pestle and allow the thyme leaves to release their oil. Add the crushed thyme and thyme oil in a pan, and then add 8-10 ounces of olive oil to it. Boil the mixture on medium heat and let it simmer for about five minutes until the mixture starts bubbling. Remove the pan from the heat and let it cool down. Strain the mixture into a glass jar or container and store the thyme oil.
