The skin of the almond has tannin, which protects the seed until it reaches its perfect condition for germination. Our body cannot break down tannin. This makes it tough for us to digest or absorb the nutrients of almonds otherwise. Hence, soaking the almond in water overnight so the skin can be peeled off before consuming is the best way to go.
