The skin of the almond has tannin, which protects the seed until it reaches its perfect condition for germination. Our body cannot break down tannin. This makes it tough for us to digest or absorb the nutrients of almonds otherwise. Hence, soaking the almond in water overnight so the skin can be peeled off before consuming is the best way to go.

Actually it is rich in antioxidants and insoluble fiber. I usually soak a few almonds before going to sleep and the next day I eat the almond with skin. Nothing bad has happened to me so far. So I think it is not bad for me atleast
