Cauliflower contains a natural chemical called goitrogen, which can interfere with thyroid hormone synthesis. The chemical is inactivated if the vegetable is cooked in light steam. This way, it will not affect thyroid synthesis, and one can enjoy this valuable antioxidant and cancer-preventive vegetable.
