I am putting it in my tea (has to be hot water to melt otherwise you will be eating a glob, and that's not enjoyable), and we are cooking with it in place of olive oil. The health benefits of olive oil are only when it is not heated. I got mine at the Green Grocer on Rte. 9 in Clifton Park - very expensive, but worth it. You have to get the Virgin (unrefined) organic - it has a faint taste and odor of coconut. I have the refined version that I bought last year, and it doesn't smell like anything. It helps your liver to get rid of all the toxins in your body, and helps your liver to work more effectively/efficiently - which is where cholesterol is made. Coconut oil is mostly saturated fat, however, it is a long chain triglyceride something or other, and your body does not process this the way it processes other types of saturated fat. It actually helps your body to burn fat.
