The leaves of artichoke contain compounds that reduce the level of LDL (bad cholesterol) and increase the level of HDL or omega-3 fatty acids (good cholesterol). The build-up of bad cholesterol can obstruct the blood flow causing an increase in the blood pressure, which eventually leads to heart attacks and strokes.
