The leaves of artichoke contain compounds that reduce the level of LDL (bad cholesterol) and increase the level of HDL or omega-3 fatty acids (good cholesterol). The build-up of bad cholesterol can obstruct the blood flow causing an increase in the blood pressure, which eventually leads to heart attacks and strokes. Artichokes help prevent these heart problems and also regulate the blood pressure.
