It has been scientifically proven that whenever a base reacts with a base, it leads to the production of a new by-product or a chemical. In this case, where lemon juice is 5% acidic and baking soda being a base, they produce salt water and emit a gas called carbon dioxide (CO2) respectively.

Science expirements are so much fun althought they can be dangerous. In this case NaHCO3 (baking soda) and C6H8O7 (lemon juice) will give you CO2 gas which we all know as carbon dioxide and other compound is just residue
