Sardines refer to the saltwater fish found throughout the world. They always travel in a large school of fish, and they are freshly cultivated in the summer season. Anchovies, on the other hand, refer to a family of small fish found in the Mediterranean, the Pacific, and the Black Sea. Anchovies are popular seafood enjoyed in Europe.
