What is the difference between canned and fresh artichokes?

Fresh artichokes require a lot of work as they are the buds of a thistle plant, so, they must be trimmed from the leaves and peeled off before you can get to their edible heart. The trimmed artichokes must be kept in lemon water to keep them fresh until you eat them, whereas, the canned artichokes come packed in water, citric acid, and salt. Canned artichokes are softer than the fresh ones and require rinsing.

Canned is not fresh I can tell you that since any canned food you never know how old the food in it be old or when it was made
