The main difference between cassia and cinnamon oil is their coumarin content. Coumarin is a plant component that can be toxic in larger quantities. In cinnamon, the coumarin content is quite low whereas, in cassia, it is much higher. Therefore, cinnamon oil is a better choice for use in seasoning. The smell and taste of both the spices are quite similar, so ensure you use pure cinnamon oil.

Cassia is the Chinese version of cinnamon and you can obtain it as a bark
