Extra virgin olive oil has a higher quality than other variants due to the process of extraction and it has an oleic acid content of less than 1%. It has a strong aroma and is golden-green in color and can be used for sautéing. Regular olive oil is mild and is subjected to refining before being packed. It is yellow in color and has 3-4% oleic acid. It is an all-purpose oil used for cooking and frying.
