Virgin olive oil and Extra virgin olive oil are always preferred for cooking as they are best at tolerating heat among other oils. Extra virgin oil can be used for sautéing, roasting, and marinating. Although none of the olive oils are good for frying, Virgin oil can be used for normal cooking and light olive oil is a good choice for frying.
