Why are almonds bitter?

Almonds may be sweet or bitter depending on the kind of tree that they grow on. Bitter almonds grow on trees with the scientific name Prunus dulcis var. amara. These almonds are bitter because they contain prussic acid in their raw, unprocessed state, which may lead to cyanide poisoning. However, the prussic acid dulls out after the almonds are baked or cooked.
