Why is purple cabbage purple?

The pH value of the soil decides the color of the soil. Purple cabbage is purple due to the acid present in the soil. The leaves grow more purple or reddish on acidic soils whereas on alkaline soils the cabbage will grow a greenish or yellowish color.

The acidity of the soil is the main factor that plays in to the colour of the cabbage grown. A lower pH would make cabbage appear redder or more purple.
