A refreshing, delicious and nutritious salad for the summer!
Prep Time15 mins
Total Time15 mins
Course: Main Dish
Cuisine: Italian
Servings: 2 people

For the salad dressing

  • salt and pepper as per taste
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

  • Cut the cherry tomatoes into halves.
  • Place the cherry tomatoes, mozzarella balls, and basil leaves in a bowl.
  • In a bowl, mix together all the ingredients. Drizzle the dressing over the salad and your delicious yet healthy meal is good to go!

For a vegan preparation, you can omit the fresh mozzarella. The salad tastes great with just tomatoes and basil too. If packing in a lunch box, keep the dressing separately.
