Nutritional Value of Beet
Beet has always been a vital source of energy enriched with nutrients and fiber. It is biennial and available almost throughout the year. Be it the modified root itself or Chard like edible green leaves both are incredibly contributing to a healthy metabolism. While Beta vulgaris is widely being relished in the form of salad with spicy and lemon like flavor and pickles, the edible green leaves too are loaded with rich vitamin and mineral content. It's subspecies are sources for highly nutritious garden beet juice, sugar production and animal fodder.

Nutrition Facts and Information about Beet:
Beet is a rich source of Potassium, Iron, Magnesium, Manganese, Phosphorus and Copper. Whereas Calcium, Sodium, Zinc and Selenium are present in small amounts.

Vitamin Content:
Beet consists of Vitamin C, Folate and Betaine in large quantities. Vitamin A, Thiamin, Riboflavin, Niacin, Vitamin B6 and Pantothenic Acid are also present in small amounts. It also constitutes traces of Beta Carotene.

Calorie Content of Beet:
Beets are known for being rich in nutrients and low on calorie, having a calorific value of 43.0 per 100 gm. As a result it forms an important part of salads for people under controlled diet.

Health Benefits of Beet:
Beet has been found useful in the treatment of Colon Cancer and birth related defects. It is a natural cleanser which removes toxins from the body and nourishes the bloodstream. Beet is useful in the treatment of liver related dysfunctions like Jaundice, Cirrhosis etc. Garden Beet juice is a good source of energy and is essential for human body. It is not advisable to feed beet to infants below six months but it is of good use to women under menstruation.

Nutritional Value of Radish
Radish is a root vegetable with a rich flavor. It is used in most of the world cuisines but is very popular in Japanese and Chinese cuisine.

Nutrition Facts and Information about Radish:
Radish has excellent levels of copper, manganese and potassium. It is also a good source of calcium, magnesium, iron, phosphorous, zinc and sodium.

Vitamin Content:
Radishes are a very good source of vitamin c and vitamin k. They also contain riboflavin and vitamin b6.

Calorie Content of Radish:
100g of radish contains 16 calories only. Radish is low in saturated fat and very low in cholesterol. They are also very good source of dietary fiber.

Health Benefits of Radish:
Radish has anti-bacterial as well as anti-fungal properties. It is beneficial for cough, respiratory problems, digestive disorders, asthma, bronchitis and liver and gallbladder troubles.

I would like for someone to tell me whether or not the tops of the radishes can be eaten as a leafy vegetable.
I read on one site that the entire plant was edible, but have never actually known of anyone eating them. Can
the tops be used as salad greens? If so discarding them would seem to be a waste.

Yes! They are a little spicy & can overwhelm when raw, but steam or saute them and use just like any other
greens. Try also mixing with water, some salt & some sugar & pickling them in the refrig for a few days.

Nancy, I don't know of a substitute; however, I don't like the taste of store-bought beets. Beets are easy to
grow and taste much better home-grown. When my wife cooks beets she saves the juice/broth for me to drink,
which is very mild and has no bitter taste.

I built a 4 X 6 table that is one-foot deep with compost soil
and the beets do very well. It is easy to care for because it is at "table height" so there is no
bending over to maintain or harvest.
