The thick stalks of the watercress can be removed and transferred to a bowl or sink of cold water. The yellow and limp springs should be separated and discarded. They have to be cleaned thoroughly so to remove the dirt without bruising the leaves. The water is to be drained, and the watercress patted dry with a paper towel. For better results, it should be used on the day it is bought.
